| Mushrooms and greenpeppers

Directions |
- (cut) dried Japanese mushrooms (shiitake)
- greenpepers (slice thin)
- onion (slice)
- salt
- soysauce
- oil
- water from the mushroom
- sesame oil
- white sesame
(Optional ingredients)
- dashi (Japanese bouillon - katsuo, iriko, or kombu dashi)
- kochujan (Korean hot paste) - not the same as red hot peper

- soak the dried mushrooms in warm water. Slice them if they are not cut.
Squeeze the water out. save the water for later (do not throw away the water).
- Put oil in a pan and fry green pepers, onion, and mushrooms.
- Add some salt.
- mix the water from the mushroom (maybe about 1/2 cup), soysauce, and also
if you have, a small amount of kochujan, and dashi.
- Add this water to the pan. Cook until the water evaporates or
the greenpepers become soft.
- add small amount of sesame oil for nice smell and taste, and add sesame.

| Steamed Eggs

Directions |
- 2 eggs
- milk
- soysauce
- salt
- sesame
(Optional)
- sesame oil
- a few pieces of cut (and soaked) mushroom
- hot green peper (a few slices)

- beat the eggs
- add water & some milk (together they should be about same amount as egg)
- add salt, soysauce, small amount of sesame oil (or regular oil) and mix well but do not create too much bubbles
- decorate with cut mushroom, green peper, and sesame (they float)
- steam until cooked (I think about 10 - 15 minutes)

| seaweed and tuna

- canned tuna
- dried seaweed ("wakame")
- soysauce
- salt
- sesame
(Optional)
- dashi (Japanese bouillon)
|
- soak wakame in water and squeeze the water (then it should be about the same amount or a little more then the tuna)
- Just cook everything together.

| bean rice

Directions |
- black beans (1/2 the amount of rice when dry)
- rice (Japanese rice is best) - about 2 cups
|
- Soak the black beans overnight
- cook the beans with rice the same way you make steamed rice
